  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled turkey sausage or vegetarian sausage
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions sliced
  • 1/2 cup avocado diced
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup salsa mild or spicy, depending on your preference
  • 1 tablespoon olive oil for cooking the eggs

Prepare the Ingredients

  • Start by preparing all the ingredients. Shred the cheddar cheese, slice the green onions, and dice the avocado. Cook and crumble the sausage if you haven't already. Set all the ingredients aside for easy access during assembly.
