Ingredients

  • Mascarpone Cheese: 16 oz about 2 cups. This rich, creamy cheese is the heart of Tiramisu. Ensure it’s fresh and at room temperature for easy mixing.
  • Eggs: 4 large eggs separated. The yolks add richness, while the whipped egg whites create a light, fluffy texture.
  • Granulated Sugar: ¾ cup. Adjust to taste if you prefer a less sweet dessert.
  • Strong Brewed Coffee: 1 ½ cups cooled. Use espresso or dark roast coffee for a robust flavor.
  • Cocoa Powder: For dusting. Unsweetened cocoa powder works best.
  • Optional: 2-3 tablespoons of coffee liqueur like Kahlúa or marsala wine for an authentic Italian touch.

Instructions
 

Prepare the Coffee Mixture:

  • Brew 1 ½ cups of strong coffee and let it cool. Add 2-3 tablespoons of coffee liqueur (optional) for extra flavor.

Make the Mascarpone Filling:

  • In a large bowl, whisk 4 egg yolks with ¾ cup of sugar until pale and creamy.
  • Add 16 oz of mascarpone cheese and mix until smooth.
  • In a separate bowl, beat 4 egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture to keep it light and airy.

Assemble the Tiramisu:

  • Quickly dip each ladyfinger into the coffee mixture (don’t soak them too long, or they’ll become soggy).
  • Arrange a layer of dipped ladyfingers at the bottom of your serving dish.
  • Spread half of the mascarpone filling over the ladyfingers.
  • Repeat with another layer of dipped ladyfingers and the remaining mascarpone filling.

Chill and Serve:

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  • Before serving, dust the top with cocoa powder using a fine sieve.
