Ingredients

  • Ripe Bananas: 3 medium-sized the riper, the better!. Overripe bananas are sweeter and easier to mash, imparting maximum flavor and moisture.
  • All-Purpose Flour: 2 cups. Provides structure. For a slightly denser nuttier flavor, substitute up to ½ cup with whole wheat flour.
  • Granulated Sugar: ¾ cup. Sweetens and tenderizes the muffins.
  • Baking Powder: 2 teaspoons. Leavens the muffins ensuring a light and airy texture.
  • Baking Soda: ½ teaspoon. Reacts with the acidity in the bananas contributing to the rise and a beautiful golden-brown color.
  • Salt: ¼ teaspoon. Enhances the other flavors.
  • Eggs: 2 large. Binds the ingredients and adds richness.
  • Vegetable Oil: ½ cup. Adds moisture. Can substitute with melted coconut oil for a subtle coconut flavor.
  • Vanilla Extract: 1 teaspoon. Enhances the overall flavor profile.
  • Milk: ¼ cup. Adds moisture. Any type of milk works including dairy-free alternatives.
  • Unsweetened Cocoa Powder: ¼ cup. Creates the chocolate swirl.
  • Hot Water: 2 tablespoons. “Blooms” the cocoa powder intensifying its chocolate flavor.
  • Chocolate Chips optional: ½ cup. Adds bursts of chocolatey goodness. Use semi-sweet, milk, or dark, depending on your preference. Consider adding some chocolate muffins for comparison to the richness of flavour!.

Instructions

Preheat & Prep:

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it generously.

Mash Bananas:

  • Mash the ripe bananas until smooth in a large bowl. A fork or potato masher works well.

Dry Ingredients:

  • In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt. This ensures even distribution.

Wet Ingredients:

  • Add eggs, oil, vanilla, and milk to the mashed bananas. Mix until combined.

Combine:

  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Avoid overmixing; a few lumps are fine.

Chocolate Swirl:

  • In a small bowl, whisk together the cocoa powder and hot water until smooth.

Divide Batter:

  • Divide the banana batter in half. Add the cocoa mixture to one half and mix until well combined.

Swirl:

  • Spoon alternating dollops of banana and chocolate batter into the prepared muffin cups, filling each about 2/3 full.

Create Swirls:

  • Use a toothpick or skewer to gently swirl the batters together in each cup. Be careful not to overmix.

Optional Chocolate Chips:

  • Sprinkle chocolate chips over the tops, if desired.

Bake:

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool:

  • Let the muffins rest in the muffin tin for a short time to cool slightly, then gently move them to a wire rack for complete cooling.

Notes

  1. Ripe Bananas: Use overripe bananas for natural sweetness and easier mashing.
  2. Chocolate Swirl: Gently fold in the chocolate swirl for a marbled effect without overmixing.
  3. Storage: Store in an airtight container for up to 3 days or freeze for longer shelf life.
  4. Customization: Add nuts or swap chocolate for caramel for a fun twist.
